Heirloom varieties are generally considered to be from seed stock that is more than fifty years old and known for their intensity of flavor. The Roma, also known as a Plum Tomato, is meatier than regular tomatoes with fewer seeds and a high sugar content. Use them to create tasty sauces and salsas or just to add extra color to salads. Selection, Storage & Handling
Select tomatoes that are heavy for their size, with no bruises or blemishes. The skin should be taut and not shriveled. Store fresh ripe tomatoes in a cool, dark place and use within a few days. Refrigeration is the enemy of the tomato as it nullifies flavor and turns the flesh mealy.
