Potatoes are important staples in many cultures. All potatoes are believed to have originated in South America. Fingerling potatoes are grown for flavor and tenderness, not quantity or size, thus resulting in the best potato available. They are very rich and flavorful and add a wonderfully special touch to any meal.

Selection, Storage & Handling:

Fingerling Potatoes should be kept in refrigeration at temperatures from 45-55 degrees F. When stored in cooler temperatures, the sugar content of these potatoes has a tendency to change to starch.

Prepare as you would any baby or specialty potato. They are thin skinned and should be cooked whole and unpeeled. Russian Bananas are great in salads and are excellent baked, roasted, and steamed as well.
