Uses:
Melissa’s Enoki (pronounced en-oh-kee) Mushrooms are prized in the Orient for their delicate size and unusual flavor. Harvested in Japan but also found in the United States, Enoki Mushrooms grow in clumps from a common base. Commercial growing of Enoki Mushrooms involves a highly specialized procedure in temperature control. Tall, thin and topped with tiny white caps, Enoki Mushrooms have a light grape-like flavor and are a wonderful addition to salads, clear soups and stir-fries. To preserve their delicate state, Enoki Mushrooms should be added to any dish like a garnish and used as a final touch.
Selection, Storage & Handling:
Enoki Mushrooms from Melissa’s are hand-selected for excellent quality. Look for fresh mushrooms that are pearly white to creamy white. Avoid any tan or yellow colored mushrooms that appear slimy. Store in the coldest part of the refrigerator in their plastic bag about 10 days.
