Uses
There are three major varieties of garlic available in the United States. The white-skinned Elephant Garlic is the most mild in flavor of the three. Elephant Garlic from Melissa’s contains savory cloves that are big in size but mild in flavor. The large cloves of Elephant Garlic are less pungent than regular garlic and do not leave a strong after-taste or odor. Grown mainly in California, (but can also be from Chile or Mexico), Melissa’s Elephant Garlic has bulbs the size of small grapefruits, with huge cloves averaging about 1 ounce each. Melissa’s Elephant Garlic is excellent when used in many Italian and Old World recipes, including pizza.
