Uses:
Cayenne is green chile that matures to a shiny bright red chile pepper used in many types of cuisines to flavor and add heat to recipes. The red chiles are spicier than the green. Cayenne peppers are hot, falling into the upper half of the heat index scale. Remove the seeds to make this pepper less spicy. Once chopped, the peppers can be added to an assortment of dishes to spice them up. Gloves should be worn when handling fresh cayenne peppers, as they can irritate the skin and mucous membranes. Selection, Storage & Handling:
Choose bright green, glossy peppers that are firm with a medium to thick flesh. Avoid soft spots. Refrigerate, unwashed in a plastic bag for up to 5 days.
