Uses:
Now available fresh, rather than powdered or dried, the Bhut Jolokia (boot joe-low-kee-uh) pepper is hands down the hottest chile on the planet. It scores a very serious 1 million Scoville heat units compared to the Jalapeno’s range of 7,000 – 11,000 units! This pepper should only to be handled with the protection of rubber gloves and long-sleeves. In cooking, use this pepper from India very sparingly as its intense heat can overpower a dish as well as those eating it!
Selection, Storage and Handling:
Choose bright red, glossy peppers that are firm with a medium to thick flesh. Avoid peppers with soft spots. Refrigerate, unwashed for up to 5 days.
