Uses:

Melissa’s Baby Artichokes have the same great taste as large artichokes. These tiny green vegetables are small in size and large in flavor. Melissa’s Baby Artichokes have a bright green color and sharp tips, these artichokes are more tender, yet firm with rich flavor. Baby artichokes make a delicious appetizer when simmered in olive oil at a low temperature, then fried at a higher heat so their leaves open, and then sprinkled with fresh lemon juice. Enjoy Baby Artichokes sliced in half then braised in olive oil, white wine, garlic and herbs or serve with risotto.

Selection, Storage & Handling:

Look for firm, thin, compact leaves on these tiny treasures measuring 11/2 to 2 inches high. Their color should be bright green without much discoloration. Store them unwashed in a plastic bag in the refrigerator and they will last up to a week.
