This hybrid variety was developed by a former horticulture professor at Texas A&M College of Agriculture and Life Sciences who was trying to simply come up with a carrot celebrating the school’s color, maroon! However the variety turns out to be 40% higher in beta carotene than a normal orange carrot. Plus the color comes from an antioxidant also found in eggplants and black grapes that reduces blood pressure as well as helps in the prevention of cancer and heart attacks. Served raw or cooked, it is sweeter and juicer than a conventional carrot.
Selection & Storage
Choose carrots that are bright and firm; avoid carrots that are dull and rubbery. Carrots keep for up to a month in a dry crisper. Never store ethylene-producing fruit with carrots; the gas turns carrot bitter and inedible.
