Easy Pixie Tangerine Mini Cupcakes

Ingredients

6-8 Pixie Tangerines (you need 1 cup of juice), 2 zested; all juiced
1 box White,Yellow, or Chocolate Cake Mix
48-50 Mini Cupcake Baking Cups

Directions

Follow the cake box directions substituting the water with the juice. Once mixed, fold in the zest. Fill the baking cups 2/3 full and bake as directed.

Makes about 48-50 mini cupcakes.
