Spring Salad with Radicchio, Watercress, Belgian Endive and Romaine

Ingredients

1 cup Radicchio washed trimmed and chopped

1 cup Watercress washed trimmed and chopped

1 cup Belgian Endive washed trimmed and chopped

1 cup Organic Romaine Lettuce washed trimmed and chopped

1/2 cup Organic Apples (Fuji) washed and chopped

1/4 cup Goat Cheese crumbled (optional)

2 tablespoons Pine Nuts toasted

Directions

Combine all salad greens and apples.


Toss with your favorite salad dressing.


Top salad with pine nuts and goat cheese (optional).

Raspberry Vinaigrette or a Blue Cheese Dressing
