Fava Bean Saute

Ingredients 

1 package Melissa's Ready-to-Eat Fava Beans 
1/2 jar Melissa's Sun-Dried Tomatoes in olive oil & herbs -- drained and minced 
1 fresh Red Bell Pepper -- seeded; diced small 
2 fresh Scallions -- sliced into thin rounds 

Directions 

In a non-stick sauté pan, cook the fava beans and sun-dried tomatoes until just heated through. 

Next, add the bell pepper and scallions and cook for 1 minute. 

If desired, season with salt and pepper. Serve hot. 

Makes four 3 ounce servings.
